This recipe outlines how to make 3 full servings of my fantastic and super special sweet potato hash.

2 sweet potatoes

1/2 bag of pre cut kale
●
1/2 a red onion
●
1 pack firm tofu (could sub eggs any style)

Dice and roast sweet potatoes (I did mine in the air fryer) with salt, pepper, garlic

Sauté kale with oil of choice or butter with salt and pepper

Dice and sauté red onion

rumble tofu and cook over medium high heat. I seasoned mine with nutritional yeast, pepper, turmeric, and garlic.

Layer in prep bowls, sweet potato on bottom, kale and onions, tofu or eggs on top
