Jonathan’s breakfast bowls

This recipe outlines how to make 3-4 full servings that will store for about a week of Jonathan's fantastic and super special breakfast bowls.

Whatcha need

2 russet potatoes

9 eggs

1 bell pepper

1/2 yellow onion

Green Chili from a jar

Optional: uncured breakfast sausage or bacon

Optional: shredded cheese

Whatcha need to do

ice and roast potatoes (again used air fryer) with avocado oil and Montreal steak seasoning

Cook up meat if using

Dice and sauté peppers and onions

Scramble egged with salt and pepper (option to sneak in some chopped spinach for extra serving of veggies)

Layer in meal prep bowls: potatoes mixed with peppers and onions, meat if desired, eggs, top with green chili and cheese if desired.

Microwave for ~2 minutes when ready to eat.
